Chicken Fajita Salad

Ingredients

  • 1 Tbsp olive oil
  • 3/4 cup sliced onions
  • 8oz skinless chicken breast
  • 1/2 tsp cumin
  • 2 tsp oregano
  • 1 cup chopped bell peppers
  • red leaf lettuce (optional)
  • 1-2 tomatoes
  • 1 avocado

Instructions

  1. Add olive oil to a skillet. Heat over medium.
  2. Add sliced onions, saute until softening.
  3. Cut into strips and add the chicken.
  4. Add the cumin and oregano, saute, tossing often.
  5. Add the bell peppers when the chicken has browned.
  6. Wash and shred the lettuce. (optional)
  7. Add the tomatoes, toss.
  8. Serve the salad on two plates, top with the chicken fajita mix.
  9. Add the sliced avocado.

    Great WOD this am. The cool air in the morning fills the lungs. Had lots of energy today and those bounding squats reminded me of playing leap frog as a kid. Keep up the hard work everyone. Pain is a temporary weakness leaving the body.

    Just finished an afternoon workout. 15 minute run for distance 1.51. miles, 5 minute rest, 15 minute row for distance 3401meters. That got the blood pumping thru the body.

    • Nice work Mike. That’s a lot of work in a short period of time. That row kicked my butt big time!!!

    I made the most yummy paleo dinner EVER. I made a beef stew with carrots, celery, onions, garlic and lots of kale. Tim loved it and so did Sophie. It was a pleasant suprise….now custard is in the oven, cinnamon smells super good.

    • Trista that sounds so good!!!! I’m going to have to try that. Holly was mentioning this morning tossing pulled pork in a crock pot with salsa….YUM!!!

    PALEO FUDGE

    13.5 oz can of unsweetened coconut milk
    1 cup almond butter
    dash of celtic seasalt
    3 tsp vanilla extract
    3 cups crushed pecans
    1/2 c finely shredded unsweetened coconut (may need sifting – the finer the better!!)

    Boil the milk and coconut until the coconut is not longer visible. Add salt, vanilla and almond butter. Bring to a boil and reduce heat. Add in pecans and stir til thickens. Poor into wax paper lined pan. Chill for 24 hrs to set. Serve COLD!!
